Muffins aux courgettes

1/2 tasse (125 ml) d'huile canola
1/2 tasse (125 ml) de compote de pommes non sucrée
3/4 tasse de sucre
2 oeufs
2 c. à thé de vanille
2 1/4 tasses de farine
2 c .à thé de poudre à pâte
1 c. à thé de bicarbonate de sodium
2 c. à thé de cannelle, moulue
1 c. à thé de sel
2 tasses de courgettes (zucchinis), râpées
PRÉPARATION
1. Préchauffer le four à 350°F (180 degrés).
2. Dans un grand bol, à l'aide d'un batteur électrique, battre l'huile, la compote et le sucre.
3. Ajouter les oeufs et la vanille. Battre tous les ingrédients.
4. Dans un autre grand bol, mélanger la farine, la poudre à pâte, le bicarbonate de soude, la cannelle et le sel.
5. Ajouter les ingrédients secs aux ingrédients humides en alternance avec les courgettes. À l'aide d'une cuillère de bois, mélanger.
6. Répartir la pâte dans un moule à muffins.
7. Cuire au four 20 à 22 minutes ou jusqu'à ce que les muffins soient bien dorés.
